Chicken and Bacon Pasta

This was a go to pre match meal during my playing days and I had to get my Nanny and Granda’s opinion on it and they were delighted. It's full of flavour, creamy and packed full of fuel for the colder months. It's so handy to rustle up and perfect for a midweek meal to get you through the darker evenings, but realistically it's perfect all year round.

Ingredients

Method

Turn cooking mode on

Step 1

Butterfly the chicken breasts, then season both sides with paprika, Italian seasoning, chilli flakes, salt, and pepper. Get your pan over a medium to high heat and add your oil in. Once warm pop your chicken in sealing both sides and cooking the whole way through. You're talking anywhere between 15-20 minutes.

The last thing I wanted to do this evening was cook .. I’ve had a migraine since last night and I could have quite happily just had chocolate for dinner! But the chicken was already defrosted so cracked on with the chicken and bacon pasta and it was another 10/10 🏅forgot to buy spinach so chucked in mushrooms instead and did use low fat garlic and herb cream cheese instead of cream as I don’t plan to play any high impact sports this evening so saved on the calories 🤣 but it was still really good! … still want chocolate though. 😩

I hope the migraine has passed Nikki, they're the worst. Glad you made the effort as your body definitely needed the good fuel to help! It's a versatile wee recipe so love how you've mixed it up 😄 A wee square of chocolate for dessert is never a bad thing 🤤

I think Granda really meant to give it a 10!! Especially because he wondered when you’d be having it again and he hadn’t even finished!!! Very good sign in my book. It would go down well I my house as Steve still plays club rugby - weekly!!
