Chocolate and Jam Roulade

I hadn’t tried the chocolate and jam combination, but I’ve been clearly missing out. Especially when my Granda Alfie dished out his first 10/10 for it. It has a lovely light chocolatey sponge, combined with softly whipped fresh cream and delicious raspberry jam. I honestly don't know why I questioned it. The lashings of melted chocolate on top add a great texture, almost like a wee yule log.

Method

Turn cooking mode on

Step 1

Add your eggs and caster sugar to a mixing bowl, whisking on a high speed until light and frothy. This can up to 5 minutes as you want to develop loads of air pockets in the mixture. You can take the whisk attachment and create a figure of 8, if the mixture leaves a trial it's good to go.

It can be a little tricky at times to roll mate. Potentially you baked it a little too long? Did it feel light and spongey when you went to roll it up? I always say if it tastes good it doesn't matter how it looks 😅 Plus a bit of practice and you'll have it nailed my man 🙌🏻
