Ingredients: 1 Pastry; 100 g Pecans; 85 g Light muscovado sugar; 2 tbsp Maple syrup; 30 g Butter; 50 g Pecans; 50 g Apricot jam; 2 tsp Lemon juice

These wee yokes have always been a favourite from the bakery section in the shop. Sweet and nutty with a slight chew from the danish pastry. I'll apologies to start because you'll see in the video I made danish pastry, I thought I was making puff pastry that day. We all make mistakes but it's how we reach and what we do after that counts. In this case I made a different recipe that was loved. Never be disheartened when life throws a spanner in the works. We can all overcome them and follow that new path which is always the right one for us!

Turn cooking mode on

Step 1

Blitz your pecans up in a food processor to give a fine crumb consistency, a bit like ground pecans. Add this to a bowl with your, light muscovado sugar, softened butter and maple syrup. Mix this together to give a nice paste.

Notes

Use 1/2 a tsp of the filling as you'll see 1 tsp is too much and I encountered another mishap. But like I've said time and time again it's how we view and approach a problem. They're all fixable and as you'll see this one was an easy fix even when my Nanny started to worry about it.
