Light and Airy Sponge Cake

This is the lightest and airiest sponge I've created. Once you try it you'll have no other option but to agree. It honestly is like a cloud, soft, delicate and so fresh. Pair that with some fresh cream, fruit and a wee flake, there's no beating it. The fact it's so light makes it so moreish, so be prepared to have more than one slice. My Granda basically polished off half the cake so there isn't much else to say, other than I hope it becomes a staple in your house.
