My Nanny Mamie's Boiled Cake

This is becoming a forgotten classic and it's a real shame. I'll admit when I was younger I turned my nose up at it, thinking it was old fashioned and full of fruit. My younger self couldn't have been more wrong. It's packed with rich fruity flavours and hints of spice. It will surprise you how moist it is and doesn't even need the lashings of butter. But the combination of the two are a match made in heaven. Paired with a warm cuppa it just screams tradition.

Method

Turn cooking mode on

Step 1

Add your butter, caster sugar, crushed pineapple, dried fruit and water to a saucepan. Get this over a medium heat gently bringing to a boil. Allow this to simmer for about 10-15 minutes, occasionally stirring so it doesn't stick to the pan. It will start to darken in colour and thicken up nicely. Once you reach this point set aside and allow to cool.

Oh so tasty, great with a big cuppa. I couldnt get crushed pineapple but just put some pineapple slices in juice into food processor and blitzed it up.
