Sausage and Bean Pie

It might look like a dog’s dinner but trust me this is like a big warm hug. One of my best friend's Kyle introduced me to this recipe and it's become a winter staple ever since. It's packed with meaty goodness from the sausages and loads of flavour from the onions, garlic and beans. Then the comforting creamy mash and heaps of grated cheese just make it the perfect winter warmer. I have a tendency to boil my beans because I love them being thick and almost paste like. But I'll admit it's better suited to a runnier bean mixture. The general consensus (my Granda) will probably find it better this way.

Method

Turn cooking mode on

Step 1

Get your favourite sausages into your baking dishes and cook these off in a fan assisted oven on 160 degrees for about half an hour. Alternatively if you're making a smaller pie, cook them off in the pan with some oil to speed things up. When this is happening boil your spuds off for the mash topping.

Notes

This makes a big old pie. I made extra so I could deliver some to one of my best mates Paddy. So half these quantities to serve 4. As mentioned I boil my beans to thicken them, but if you prefer more sauce in your pie feel free to just gently heat them with the onions.

Slipping into a sausage coma after this! 😮‍💨🐖. Another 10/10! Added some smoked bacon I had left over and also chopped up some haggis and added that when I was cooking off the onions as well as I just love haggis! 🤣. Will definitely be making this one again ❤️.
