Nanny's Traditional Beef Stew

We all have our own way of making a good pot of stew and this my Nanny way. It was another battle getting her method and quantities nailed down as the video shows, but it was worth it. I've fond memories of getting this as a young fella through the winter months. But honestly I could eat it year round. It's a proper filling and hearty dinner filled with beef and spuds, which seems to just warm the soul. My Granda was pleased as ever getting this but you’ll laugh, he never puts sauce on food. He says it spoils the flavour and insults the chef, then again this doesn't need it because it's bloody delicious!

Step 1

Get your large pot over a medium to high heat and melt down your lard or add oil. When its properly hot add your beef in stages, searing off to seal. If the pot isn't hot enough juices will run from your meat, which you want to avoid.

1 knob Lard

1 knob Oil

750 g Steak pieces

1 kg Steak pieces

Step 2

Once browned off and sealed pop your beef into a separate bowl. Reheat your pot and add more lard or oil if needed. Repeat this process until you've seared all your beef off.

Step 3

Now add your onion to the pot and soften this down for a few minutes. Add your garlic to this and cook off for a minute or so.

1 Large onion

4 Garlic clove

Step 4

Pop the beef back in along with your beef stock, which should just cover everything. Bring this to the boil and turn down to a simmer. Cover with your lid and simmer for around an hour.

1 Beef stock cube

Step 5

Add your carrots and top up with some boiling water to keep the liquid just covering the rest of the ingredients. Simmer until your meat is nice and tender, which should take around an hour to an hour and a half. You can use a knife to test your beef and when its tender your good.

3 Carrot

4 Carrot

500 ml Boiling water

Step 6

Once your beef is tender and the carrots are softened, launch in your potatoes. Boil this down for about half an hour until they're soft. You can make them mushy depending on how you like your stew. Season this well with salt and pepper.

4 Large potato

5 Large potato

Step 7

Now serve this up and enjoy. This with the heal of a Nutty Krust loaf and loads of butter is something else!

So easy to make and handy to make in the morning like I did and simmer away. I did add a touch of gravy to thicken it up a bit (personal preference) but needs to come with a warning for being so warm on the first mouthful 😂 bead with a wack of butter hidden from pic. Safe to say not much left on any of the plates today

Love seeing this Fiona! I'm definitely going to add some gravy to mine next time 🤤 You know what my Nanny and Granda are like though, traditional as they come! I will have to sneak it in or just make my own batch 😂

Oh here, tell her to try it and see, if she doesn’t like it you won’t add it again 😂😂. Apparently so not that I’m complaining but might try it in the slow cooker next time and see how it goes 🤞

Made this for dinner tonight and as someone who usually makes my stew with loads of different seasonings added I was worried it would be a bit bland (don’t tell your nanny 🤣) but i couldn’t have been more wrong! It was delicious and plenty of flavour … definitely no need for any brown sauce! 😍
