So I’d been meaning to make this soup for ages and already had all of the ingredients in, but as usual I am basically incapable of following a recipe and also forgetful so instead of Thai red lentil soup it’s just Thai red soup (I forgot to add the lentils) also added some sweet potato and carrots that I had laying around and cooked it in the slow cooker .. but apart from that it’s exactly the same as yours 🤣. It was delicious though and went well with a cheesy 2 ingredient flat bead on the side ☺️

That sounds delicious Nikki 🤤 That's the beauty of cooking unlike baking, you can play about with the recipe more! The lentils thicken it up and obviously there's some flavour there as well. But you did a great job replacing them with sweet potato and carrots 👏🏻 Great intuition! Did you make the flatbreads? They look so good 🙌🏻

I did mine in the slow cooker so the plan was to add them a couple of hours before the end but I forgot! 🤣 but yeah, carrots and sweet potatoes worked really well and good for the added nutrients. Yeah the flatbreads are just those 2 ingredient ones (three if you include the pinch of salt) but it’s just fat free yogurt and self raising flour. They’re good as they are but obviously a bit of grated cheese on top doesn’t hurt! 😂
