Thai Red Lentil Soup

This wee soup is probably one of the handiest recipes you'll ever make. It's perfect to warm you up on the colder days and packed with flavour. Lovely and fragrant from the Thai red curry paste, yet creamy and delicious with the addition of coconut milk. You can add some chicken for an added protein boost, something I'm trying to get my Nanny and Granda to do

Turn cooking mode on

Step 1

Heat your butter or olive oil in a large pot over a medium heat. Chuck our onion in and cook this down until softened, this will take about 5 minutes.
