Cheesecake Buns

These aren't what you think of when you hear cheesecake? But I've always known them as this and I think others will agree. I've heard slight variations on the name, such as ‘Welsh cheesecakes’, but no matter the name they're delicious. Starting with a buttery shortcrust pastry base, filled with sweet jam. Then topped with a light sponge and drizzled with icing and flaked almonds. A match made in heaven for me and I doubt you'll stop at one when you get a cuppa poured.

Method

Turn cooking mode on

Step 1

Roll your shortcrust pastry out on a lightly floured surface to about 5mm in thickness. (The recipe is in the post section). Cut your pastry cases out with a floured 6cm pastry cutter or glass, popping each disc into your patty bun tins. You'll should get roughly 24 discs.

We called them Queen buns when we were growing up. My Mum made them every Saturday with the scones
